Key Takeaways:
A few years ago, Kimberlee realized she needed to eat a healthier diet. After experimenting with new savory ingredients, spices, and zests, she found it easy to give up the bad food because the healthy food tasted so good. She has submitted a guacamole recipe with one ingredient you might not expect.
Cooking time
15 minutes
Servings
4
Ingredients
2 ripe avocados
1 lime at room temperature
1 Roma tomato, diced
2-3 tablespoons red onion, diced
2 tablespoons fresh cilantro, minced
1/4 teaspoon cayenne pepper (more or less)
Pinches of salt and pepper to taste
1-2 tablespoons fresh pomegranate arils
Directions
1. Juice the lime and place in mixing bowl.
2. Add the diced onion to the lime and stir to coat.
3. Scoop diced pieces of avocados into bowl with lime juice and onion. Mash together.
4. Stir in the diced Roma tomato, minced cilantro, and spices.
5. Stir until combined and place in serving dish. Sprinkle top with pomegranate arils.
6. Serve immediately with favorite dip chip or store tightly covered in the refrigerator until ready to serve. (I like to do this to give time for flavors to blend.) Enjoy!
