Directions

1. Wash pearl millets and soak them overnight. Then extract the water and keep it covered for 8 hours to sprout.

2. Heat clarified butter in a pan, add clove and cinnamon, and cook.

3. Put sprouted pearl millets to boil in some water. You can also pressure cook them. 

4. Meanwhile, start boiling milk separately and reduce it slightly.

5. When pearl millets are soft, mix them in milk and let it cook in a heavy bottom pan to reduce like thick porridge consistency.

6. To this, add finely chopped dry fruits and sugar. Cook well for five more minutes so that it becomes thick in consistency. 

7. Switch off the gas and add 4 crushed cardamoms and saffron to it.

8. While plating, garnish with shredded pistachio and almonds.
