- 12 ounces of pasta of your choice

- 1 large lemon
- 1/4 cup cashews
- ¾ cup water
- 6 tablespoons myokos butter
- ¼ cup parmesan (myokos or follow your heart)
- Salt and pepper to taste
- Begin by preparing the lemon. Using a vegetable peeler, remove two 2-inch-long strips of lemon zest. Thinly slice each strip lengthwise into strands, and set aside for serving.
- Finely grate the remaining zest into a large Dutch oven or other heavy pot.
- Cut the lemon in half and squeeze the juice into a small bowl to yield 2 tablespoons; set aside.
- Add cream to the pot and cook over medium heat, whisking often, until it begins to simmer, about two minutes.
- Reduce heat to medium-low and whisk in butter one tablespoon at a time until melted, creating a creamy sauce. Remove from heat and cover to keep warm.
- Cook pasta in boiling salted water until very al dente. Simultaneously, cook the broccoli.
- Scoop out 3/4 cup of pasta cooking liquid, adding it to the cream sauce.
- Return sauce to medium heat, transfer pasta using tongs, and toss, adding Parmesan gradually until the sauce is creamy.
- Stir in reserved lemon juice and rind, season with salt, and then stir in the broccoli.
- Divide the pasta among bowls, season with pepper, and top with reserved lemon zest strands.
